My question is, if this does become a game, what incentives would there be for people to play as unicorns or earth ponies? What would they be able to do that would compare with being able to fly?

Yup, seems like the modeler is listening. Now just to solve the last bits of oddness with the hair (perhaps something so that you can't tell that the hair is attached the way it is at the base, and so that it flows more as a solid mass instead of a bunch of strands) and the camera clipping issues.
But besides that, this is possibly the second most awesome game-like thing I've ever seen from this fandom. The most awesome being the previous video.

The runs need to be about 20% faster. Actually, they need to be about twice as fast as they are now - they look a little floaty. Same with the wing-flaps, they should be faster too.
Okay, they're just taunting me with this. >_> I remember saying a while back that the main draw of this would be aerial acrobatics and being able to do things like pulling off a Cuban 8 as a pony.
And just look at what they're doing in the video.
...okay, yes. I want to play this. It's been far, far too long since I've played something fun that has proper flight sim-like controls without getting incredibly bogged down in simmyness. This really looks like something I'd want to play.
Why can't dragon games have control schemes like this? I'm looking at you, Ego Draconis! And you, Lair! You suck compared to this!
I want to play this so bad I can taste it! I hope so much that this becomes an actual game! *hopes to any and all deities I can think of that Luna will be in it*
I am thoroughly convinced that this will be epic. Needs more work overall, but seeing how this is a demo from an independent developer that probably doesn't have much budget all based off of a show that most people weren't even aware of a few months ago, this is great.
This stuff is incredible... and this is just fan work! I've never seen a fandom so furiously creative as to actually take such steps towards serious production of quality material. Toys, games, art, clothes... we're actually trying to collectively take up slack from every opportunity Hasbro itself isn't taking! Can you imagine if there were real money behind these projects??

Yeaaaaah I like unicorns the most but I'd wanna be a pegasus. I just can't see anything else being cool enough to compare to FLYING!!!! I mean, just LOOK at that. Amazing.
The hair still needs work, as everyone else has pointed out, and maybe the shader could be tweaked so the linework looks closer to the show's style from more angles. Other than that, I am well and truly impressed.

Applejack scared me at first. Nice hair physics engine. Could use some collision detection with their bodies though.
